The incoming Guapo Taco will open at the Colorado Mills Mall 14500 W Colfax Ave, Lakewood, CO 80401, on October 18

The 4,900-square-foot restaurant (plus patio) will offer a creative menu featuring starters, entrées, and craft cocktails. While Guapo Taco intends to offer the classics — carnitas, slow-cooked pulled chicken, and an array of salsas — it also has plans to experiment with bold flavors and unique constructions. 

According to the Denver Business Journal, GT will offer eclectic items like “grilled Mahi with pineapple and Asian slaw, warm buttered lobster with New England slaw and lime crema, and a lamb birria taco made with a slow-cooked lamb neck and served with a creamy au jus for dipping.” 

It’s unclear if Guapo Taco will become a chain or begin franchising. 

In addition to their premium, stacked burgers, 5280 Burger serves slow-roasted pork street tacos — a delicious indicator that they’ve seen some success regarding their more foldable options.
