Apple Blossom is Coming to The Hyatt Centric in Downtown Denver

The owners of Beast + Bottle (which closed down this year) are set to take over the restaurant space in The Hyatt Centric Hotel in Downtown Denver. brother-and-sister duo Paul and Aileen Reilly will be opening Apple Blossom in the hotel restaurant space.

The restaurant is set to take after Reillys’ other restaurants Beast + Bottle and Coperta, by bringing the same cooking skillsets and focus on farm-fresh and local ingredients. For example the chefs plan to make homemade pasta from Colorado-sourced grains. They also plan to source meat and seafood from around the region.

Even though this space will be considerably larger than Beast + Bottle, by catering to a large number of hotel guests instead of a cozy dining room and bar that seated no more than a couple of patrons. But the chefs will still bring their homey sensibility to their new space too.

The Hyatt Centric is located in Downtown Denver around multiple other hotels, restaurants and businesses. The restaurant will be located within the hotel in Champa St, right off 18th St.
