A restaurant brand known for its convenient and healthy, scratch-made food options is opening a new location in Aurora. The upcoming Modern Market Eatery will be located at the bottom of the Hyatt House Aurora Hotel, according to a press release.
Modern Market Eatery plans to implement the overall updated restaurant design in the Aurora location and other new locations moving forward, turning a fresh chapter in restaurant development and design for the brand post-pandemic. Modern Market Eatery also plans to move its company headquarters to the RiNo Art District in Denver sometime this summer.
“Colorado’s population has grown almost 15% since the brand’s fruition in 2009 – with a large portion of population growth in the Denver metro area and Front Range, which have added new territories and communities steadily,” said Rob McColgan, Co-founder and CEO of Modern Market.
“We’re constantly working to adapt our menu and further our reach in our home-market communities and beyond to meet the consumer demand for delicious, healthy, affordable and convenient food, and this upcoming location in Denver is a huge part of that,” McColgan said.
The Modern Market Eatery menu offers fresh salads, grain bowls, toasted sandwiches, and brick oven pizzas. All-day breakfast options, handmade lemonades, and specialty desserts are also available.
Modern Market Eatery currently has nearly 30 restaurants across the United States with 16 in Colorado since it first opened in Boulder in 2009. The new company-owned Aurora restaurant is tentatively scheduled to open at the end of the third quarter near Colfax Ave. and Peoria St.
