It looks as though offerings of Cajun and Creole cuisine are coming to downtown Windsor in the spring of 2022.

Betta Gumbo chef and owner Clay Caldwell is expanding his dining experience to add a second location. According to a Loveland Reporter-Herald article, the new restaurant is planned for a spot at 526 Main St., Windsor, CO 80550.

The menu features a variety of Southern dishes. Diners can start with an appetizer of fried green tomatoes, fried okra, or Cajun French fries, with the option of smothering the fries in some gumbo.

Entrees include shrimp and grits, jambalaya, fried catfish, and crawfish etouffee. And of course, gumbo is offered featuring flavors of seafood or chicken and sausage. Po’ boys, pastas, and salads are also on the menu.

The drink menu is extensive. Moonshine-based drinks including margaritas, voodoo juice, and swamp water are available, along with a variety of other hand-crafted cocktails. Hurricanes, mules, and martinis add to the selection.

Betta Gumbo first opened on Fourth Street in Loveland back in 2013, and the original location moved to North Lincoln Avenue at The Foundry last year.
