Cafe Rio Mexican Grill Expanding in Colorado

Tex-Mex restaurant plans two additional Colorado locations.

Lease intel suggests a Cafe Rio Mexican Grill will be opening in a former KFC/A&W location in Greenwood Village. The Cafe Rio website confirms another Colorado location will open soon in Highlands Ranch.

Cafe Rio opened its first restaurant in Utah in 1997 and has expanded to several other states including California, Arizona, and Nevada. The Tex-Mex restaurant currently serves Colorado customers at eight locations across the state such as in Castle Rock, Centennial, and Fort Collins.

Cafe Rio dishes are inspired by authentic recipes of Northern Mexico’s Rio Grande region, South Texas, and New Mexico. The restaurant’s mantra is “fresh food, made fresh” with Cafe Rio only using the freshest ingredients to create dishes each day.

The menu includes nachos, salads, tacos, and quesadillas. Diners can order a burrito enchilada-style. It is homemade tortilla filled with a choice of protein, black or pinto beans, and cilantro lime rice. It’s then smothered with cheese and a choice of a signature sauce.

A variety of appetizers including chips and salsa, queso, and tortilla soup are also offered. Plus desserts such as tres leches and a variety of specialty juices and teas round out the menu.

The possible Greenwood Village restaurant would be located at 9351 East Arapahoe Road, while the location in Highlands Ranch will be found at 9215 South Broadway. There’s no word yet on when either Cafe Rio location will open to the public.
