President and CEO of Cafe Rio Steve Vaughan told What Now Denver he’s excited about the two new Denver area openings — which WND covered late last year — and definitely has plans to expand further. While Vaughan couldn’t provide specific details about the locations’ whereabouts or launch dates due to the concept’s infancy, he did tell What Now Denver that they are planning further expansion in both Denver and Colorado Springs.

This news comes on the heels of the grand opening announcements for the aforementioned Cafe Rio locations – one in Greenwood Village (9531 East Arapahoe Rd.) launching on September 30, and another in Highlands Ranch (9215 S. Broadway) set to debut in December

“Each new location will celebrate [its] grand opening with exciting games like Plinko and corn hole, and chances for participants to win a variety of prizes,” explained QSR. “The first 100 dine-in customers will receive free gifts and an additional 100 will win a free meal! Cafe Rio will also be offering chips & salsa or chips & queso for $1.99.”

The Greenwood Village grand opening will run from September 30-October 1, starting at 10:30 am and ending at 7:30 pm. Temporal information regarding the Highlands Ranch grand opening is currently unknown.

“Cafe Rio dishes are inspired by authentic recipes of Northern Mexico’s Rio Grande region, South Texas, and New Mexico,” explains Amber Brown of What Now Media Group. “The restaurant’s mantra is ‘fresh food, made fresh’ with Cafe Rio only using the freshest ingredients to create dishes each day.”

Cafe Rio customers can enjoy an array of Tex-Mex dishes including enchilada-style burritos, regionally-inspired salads like the sweet pork barbacoa salad; tacos, quesadillas, tortilla soup, sweets, and savory/spicy sauces.
