Café Rio, the popular fast-casual Mexican restaurant known for its fresh, made-from-scratch cuisine, is expanding its presence in Colorado. A recent press release teased that the chain will open a new location at Bowles Crossing Shopping Center in Littleton — 8055 W Bowles Ave.

“We’re excited to unveil our new Fresh Modern Mexican restaurant design. Inspired by the Rio Grande Valley, you’ll notice elements – like the exterior mandala mural, rustic lantern-inspired lighting, and earthy desert touches,” the company told What Now Denver.
Scheduled to open in December 2024, this marks the 14th Café Rio location in the state. It will be a drive-thru location for added convenience, and one of six new tenants coming to Bowles Crossing over the course of the next year.
Founded in 1997 in St. George, Utah, Café Rio is renowned for its fresh, made-from-scratch Mexican-inspired cuisine. The brand has become a favorite for its flavorful offerings like the signature Sweet Pork Barbacoa, hand-pressed tortillas, and a variety of homemade sauces. Expanding rapidly, Café Rio now boasts over 140 locations across the United States.
