Castle Rock Puerto Rican Food Truck Making Move

El Coqui PR Food Truck will begin mobile offerings after moving from permanent spot on Wilcox St.

A Puerto Rican food truck serving Castle Rock diners since April 2021 will begin offering mobile food services next month. El Coqui PR Food Truck co-owners and sisters Millie Otero and Rebecca Otero have been working out of a space at 825 Wilcox St. in Castle Rock. They recently shut down their permanent spot as the plaza owner works to get permitting to bring in additional food trucks.

“Right now, I don’t have a stable location. I will be moving around Castle Rock,” Millie Otero told What Now Denver. The food truck will be located around downtown Castle Rock to feed hungry diners on Saturdays and Sundays starting next month.

Otero plans to move back to the 825 Wilcox St. location in the future. Until then, diners can find the El Coqui PR Food Truck at local breweries and festivals. Check the business’s Facebook page to find out where to find their authentic Puerto Rican dishes.

The menu is an extensive one. It features house-made, alcohol-free pina coladas, triple-meat sandwiches, and plantain bowls served with seafood, pork, or chicken. Shrimp salad and king crab salad are also options.

The Oteros also own a restaurant in Puerto Rico, currently run by their brother. The Otero sisters hope to open a brick-and-mortar restaurant to Colorado in the future. “I want to be local here in Castle Rock,” Millie Otero shared.
