“Denver has a strong hospitality industry, so it’s a great place to bring our concept,” Michael McGill, president of Bobby’s Burgers, said in a conversation with What Now Denver.

The “craveable” fast casual eatery aims to combine Bobby Flay’s renowned culinary skills with food available to most consumers.

“It’s where creativity and accessibility meet,” McGill said. “Not everybody can go to Amalfi or Mesa Grill, so we’re offering an affordable price point. That’s the great thing about the menu: it’s truly inspired from Bobby’s travels throughout the U.S., and one of his favorite foods is burgers.”

McGill stressed that the “diversity of menu is important,” which is why there are not only eight burger options (including the award-winning Bobby’s Veggie Burger made from chickpeas), there is a chicken sandwich, a multitude of sides, and even six breakfast options all featuring Flay’s signature American style and dedication to craft.

“One of the items we’ll have is Crunchburger, which highlights Bobby’s vision to bring taste and texture together,” McGill said. “It’s a six-ounce patty of always fresh, never frozen, 100% Angus beef under potato chips, American cheese, and Bobby’s secret sauce (a roasted red pepper and chipotle mayo).”

Bobby’s breakfast burrito also features a potato chip crunch to go along with “soft” scrambled eggs, American cheese, bacon, Bobby’s Sauce, avocado, tomato, and chipotle salsa on a whole wheat tortilla. Ingredients are all high-quality and everything at Bobby’s Burgers is made to order. This includes hand-battered onion rings and “high-end” milkshakes.

This quality is the reason why the franchising arm of the restaurant is being so diligent in its search for a Denver franchisee. Ideally, Bobby’s Burgers will establish itself in Denver and gradually extend out into nearby markets. Step one, though, is finding the right person to helm the Colorado ship.

“We’re all about finding the right partner for the market,” McGill said. “We’re looking for seasoned operator with a strong understanding of the restaurant industry and an entrepreneurial spirit.”
