Slated to open in Spring or early Summer 2025, the new establishment will occupy the space formerly used by an art gallery, next to Odie B’s. The restaurant will feature a newly constructed dining room, bar, and prep kitchen, while utilizing the existing kitchen facilities of its sibling concept.

Boombots Pasta Shop promises an innovative menu with items like Dirty Martini Bucatini and smoked duck green chile mac and cheese. The restaurant will debut with a pop-up event on November 15 at Odie B’s, allowing diners to sample dishes and provide feedback.

The name “Boombots” draws inspiration from old-school Italian slang, humorously translating to “idiots.” Blauvelt describes the new concept as “Odie B’s bougie older brother,” telling What Now Denver that Odie’s gives off a “Lil’ Wayne and Supreme” vibe, while Boombots will lean more toward “Pharrell and Louis Vuitton”.

Blauvelt’s team includes executive chef Connor Gushen and culinary director Jesse Moore, both bringing extensive experience to the table. The property’s design, led by Regular Architecture, will feature a mural by local artist Jolt.
