Owners Nicole Martinez and Debbie Downing opened the food truck during the summer and served as a vendor at Switchbacks FC’s Weidner Field, baking up Bunzy sandwiches and warm cookies.
Bunzy sandwiches are made with hand-crafted bread dough that is stuffed with a variety of fillings and baked. Breakfast options are available, and the Original Bunzy features a filling of ground beef, cabbage, and onions. The Philly cheesesteak, cheeseburger, mushroom Swiss burger, and vegan are other options of the Bunzy available on the menu.
About a dozen cookie flavors are on the menu including chocolate chip pecan, sugar, and ginger with ginger frosting. Diners can also get some cookie selections made into an ice cream sandwich or enjoy soft-serve ice cream or sundaes with plenty of toppings as other sweet-tooth options.
They plan to expand the menu at the brick-and-mortar restaurant to include a full bar and pizza.
They hope to open the restaurant at 1919 E. Boulder St., Colorado Springs, CO 80909 by the end of December.
