Deviation Distilling‘s new Dairy Block location is set to open on Sept. 2, the distillery announced today. It will be the first distillery to open in the downtown Denver shopping and dining district.

“Surrounded by world-class dining, lodging, and retail, we are thrilled to bring the first distillery to Dairy Block,” Cindi Wiley, Deviation Distilling co-founder, said in a statement. “The energy, the foot-traffic, the year-round nearby events and everyday activity create a destination that is unmatched in Denver.” 

Deviation’s new 1800-square-foot location will span two stories at 1821 Blake Street, taking over the space of a firehouse from the 1800s. It will feature a patio, lounge and event space, which can be reserved for private parties. The menu includes a new cocktail lineup made with Deviation’s gins, as well as charcuterie boards and a cupcake flight.

Deviation also is releasing two new products that will be exclusive to its Dairy Block location: A blood orange gin developed by head distiller Dave Gade, which will be available opening day, and a barrel-finished whiskey made in fellow Dairy Block tenant Blanchard Family Wines Dry Creek Valley Zinfandel barrel, available in mid-September.

Deviation previously was located in the Baker neighborhood, where Cindi and Bob Wiley, along with Gade, opened it in 2019. That location has since closed, and the distillery plans to expand its production facility to Sheridan.

Starting Sept. 2, Deviation’s new home on Dairy Block will be open from 1 to 9 PM on Sunday through Thursday, from 1 to 10 P.M. on Friday and from 12 to 10 PM on Saturday.
