Noella Colandreo and her husband, Chef Anthony Sanschagrin, are planning to open 300 Prime Boulder at 1125 Pearl St. in Boulder sometime this summer.
They were originally looking for a second space in Longmont but decided on the former space of West Flanders Brewing Co. on Pearl Street. “We just fell in love with it, and our creative brains went wild. It just started falling into place,” Colandreo told What Now Denver.
The new 300 Prime Boulder restaurant will be family-oriented but also a good spot for happy hour in a warm, trendy, and fun environment. The menu will offer primarily the same items as Dickens 300 Prime. “We are going to offer a little more variety and extra items that we don’t currently serve at our other location. That will also be the same for more of our wines and cocktails,” Colandreo explained.
She thinks the new Boulder spot has the same historical feel of Dickens 300 Prime, which will continue to serve diners. “We couldn’t ask for a better location in Longmont, and we love it. That’s going to be our forever original home.”
They are now working on getting a liquor license for 300 Prime Boulder, so the opening date could be late May or early June. “It’s exciting that we even have the opportunity to be a part of a great community,” Colandreo said, “so it’s going to be really fun. A lot of hard work, but it’s going to be fun.”
