Downtown Denver Bar to Highlight Pueblo

Spring opening of Fuel and Iron Bar is a pre-cursor to planned Pueblo food hall.

An idea to open a food hall in Pueblo led to another project in downtown Denver that will focus on the community and history of the southern Colorado city. The Fuel & Iron Bar will be located in the former Brass Tacks location at 1526 Blake St. in downtown Denver and is expected to open this spring.

Nathan Stern and Zach Cytryn with Fuel & Iron Realty are the developers behind the Fuel & Iron Bar, which will be the first brick-and-mortar endeavor for Fuel & Iron Realty.

Stern grew up in Denver but fell in love with the city and community of Pueblo while working there. He realized a lot of people in the Denver community haven’t visited Pueblo, so he and Cytryn wanted to bring the tastes of Pueblo to downtown Denver. “We also want to be a hub for people who grew up in Pueblo who have moved to Denver and are looking for a slice of home,” Stern said.

The Fuel & Iron Bar will serve an elevated pub menu that focuses on Pueblo-made products. The kitchen will serve Pueblo classics including green chile made with Milberger Farms Pueblo chiles, and a smaller slider take on the famous Green Chile Slopper. The slopper will be an open-faced slider smothered in cheese sauce and green chiles.

Guests can expect to see dishes featuring meats from Gagliano’s Italian Market & Deli and cheeses from Springside Cheese Shop. Seasonal produce from Pueblo will be featured in salads during the growing season and soups during the off season.

They are still working to finalize the menu, but it could also include pretzel bites and nachos. “There are a lot of different things that you can do with a really good green chile and a really good cheese sauce,” Stern told What Now Denver.

Colorado microbrews including Fuel & Iron beers brewed in partnership with Copper Kettle Brewing Company will flow from the taps, and craft cocktails will be served.

The space will be outfitted with a mural of Pueblo’s steelworkers from artist and former director of the Pueblo Arts Alliance, Dan Levinson. Historical photographs provided by the Steelworks Center of the West and industrial finishes will help tell the story. 

Another chef and restauranteur will take over the upstairs mezzanine level to offer a different concept, which will be announced in the near future.

Stern and Cytryn plan to open the Fuel & Iron Food Hall in Pueblo in the fall of 2022. Pop-up events will reveal the restaurants that will take over the kitchens at the food hall. The first revealed restaurant is Diavolo, which will serve Colorado hot chicken using Pueblo chiles.
