Fort Collins is set to welcome two exciting new dining concepts: Bonchon and Brown Donkatsu. These additions will occupy the former CooperSmith’s Poolside space at 5 Old Town Square, Retro 102.5 reports.

The two concepts will bring unique Korean flavors to the city in a shared 5,000-square-foot space. A lease agreement has been signed, and permitting will happen in the fall. The anticipated opening is set for March or April 2025.
Bonchon is known for its delectable Korean fried chicken, brushed with its unique sauces. Brown Donkatsu will introduce a variety of Korean-style breaded pork cutlets, a twist on the original Japanese Tonkatsu.
Henry Lee, a seasoned franchisee who owns five Bonchon locations in Colorado Springs and Denver, is spearheading the expansion into Fort Collins. He has a background in finance and tech, having worked at renowned firms like Deloitte, PwC, Ernst & Young, Accenture, and Microsoft before transitioning into the food industry.
“I’m extremely excited to be bringing Bonchon and Brown Donkatsu to Fort Collins,” Lee said. “I receive a lot of emails from customers asking me to open a location here. It’s finally happening. Look forward to being part of the community.”
