The historic Northern Hotel building in Old Town Fort Collins will soon welcome a new tenant with a nostalgic twist. Edison’s Ice Cream, which will specialize in handcrafted, artisanal ice cream, is set to open its flagship location at 172 N. College Avenue next spring.

The space, previously occupied by Starbucks until its closure in April, will undergo a retro-inspired renovation. Edison’s will feature a “retro-fresh design,” evoking a sense of simpler times, symbolizing a place where families and friends gather to share sweet moments.
Ahead of the shop’s official opening, Edison’s is already serving Northern Colorado with a mobile ice cream cart available for private events. Additionally, the company plans to launch online pint sales for local pickup before the parlor doors open.
Edison’s Ice Cream will offer a wide range of dairy, non-dairy, and gluten-free options. From classic options like Essential Vanilla to inventive creations such as Orange-Infused Olive Oil, No-Bake Cookie, Lemon Bar, and German Chocolate Brownie, Edison’s menu offers something for every palate.
“Ice cream has always been a passion my whole family has shared, and those memories are what sparked the inspiration to open Edison’s. We want to create an environment where people can connect over the simple joy of sharing ice cream together,” shared owner Nate Frary.
