Michelin-star restaurant alums Chris and Ariana Teigland will serve skewers, small plates, noodles and Japanese-inspired cocktails

Husband and wife co-owners Chris and Ariana Teigland will open glo on March 17th at 38th and Tennyson. Having met working in the Blackbelly kitchen in Boulder, and after spending time together working in kitchens and restaurants in both Colorado and Chicago, Chris will helm the kitchen while Ariana will lead the service staff and bar program.

The restaurant’s name pays homage to Chris’ mother, Gloria, who went by the nickname Glo. Glo was a pastry chef who put Chris to work in the kitchen as a kid. She also encouraged him to explore other cuisines and, when she saw how he loved Asian food, bought him a wok to practice what he learned in the Asian cookbooks he was studying.

“My mom’s love language was cooking meals for people and she passed that down to me,” said chef owner Chris Teigland in a statement. “Shortly after I had my first executive chef job, my mom passed away. I remember holding her hand before she passed and telling her I would be a great chef one day and make her proud. The name is a way for me to honor her, to never forget her and to thank her for allowing me to be myself and to pursue a different style of cooking than she practiced.”

The broth at glo will be made following traditional methods with at least 48 hours between onset and service. Stand out noodle items include miso bacon ramen with bacon, egg, black garlic oil, chili jam, green onion, sprouts and narutomaki; lemon chicken shio with crispy chicken, lemon, egg, menma, bean sprouts, scallion and chili jam; and kimchi Bolognese – Chris’ twist on the traditionally Italian dish – prepared with ground pork and beef parmesan, green onion, sprouts, poached egg and gochujang.

The menu is also full of small plates including steak tataki, bone marrow temaki and chicken Karaage along with skewers (photo) loaded with items like pork sausage, chicken skin and chili pork. Desserts include lemongrass panna cotta with Thai basil and a chocolate tart with yuzu and toasted, malted meringue. glo is using produce from local farmers as inspiration for the daily menu and sourcing many proteins from Lombardi Brothers Meats.

The cocktail list takes a cue from the food menu. Departures is made with Nikka gin, white soy, grapefruit and tonic; Castle in the Sky features Mmizu Shochu, white grape, ginger beer and Mitsuya cinder candy; and Seven Samurai brings together Nikka grain whisky, passionfruit, green peppercorn and Pedro Ximenez.

glo’s 1,500 square-foot dining room will have traditional dining tables as well as the option to dine at one of the handful of bar seats or, for those who want to see more of the action, at the kitchen bar. The patio space will be open, weather permitting and, with space for 50 seats, will double the restaurant’s capacity. Local artists and creators will be represented throughout glo. For example, Arvada-based tattoo artist Matty Lockhart of Low Creek Tattoo painted a hallway to evoke a Tokyo alleyway. Crockery was made by Denver-based ceramicist John Domenico. A giant mural of the Gashadokuro by artist Brandon Vargas will peer down on guests from the dining room wall.

“We wanted to collaborate with as many creative minds as possible and called on people who have inspired us in the past,” said owner Ariana Teigland. “Chris and I have spent a lot of time under creative constraints and we find that we flourish when trusted to do what we love. We gave other creatives the opportunity to express themselves in a way that is authentic to them and it all came together really beautifully.”

glo is located in the Tennyson neighborhood at 4450 West 38th Avenue, Suite 130. The restaurant offers dinner Monday through Saturday starting at 4 p.m.
