With yummy waffle dishes and a selection of boozy breakfast drinks, a new restaurant in Greeley aims to elevate the town’s brunch offerings. Oak and Maple is a coming concept that will be located at 1640 8th Ave., a Greeley Tribune article states.

The eatery’s menu shines a spotlight on waffles of all kinds, from sweet to savory. A list of fun and refreshing A.M. alcoholic drinks will also be available. Owner Matt Estrin will include concoctions with spirits from his other business, 477 Distilling, as well as local breweries like WeldWerks Brewing Co. and TightKnit Brewing Co.
Oak and Maple will take over the ground floor space at The Boone at Maddie apartment complex. The property was previously occupied by the health-conscious chain Slushed, which closed eight months ago. The location, right next to the University of Northern Colorado, is expected to attract busy crowds.
This venture is Estrin’s first foray into the restaurant, though he is no stranger to the hospitality industry. He is the business owner of local ventures 477 Distilling and axe-throwing venue Greeley Hatchet House, and runs After Hours Cocktail Bar in Fort Morgan.
