Happy Bakeshop Adding More Space for Decorating, Custom Orders

A Denver bakery will undergo renovations to increase production space.

A local, woman-owned gourmet bakery will undergo renovations to add more space for decorating and production. Happy Bakeshop general manager Jade Dillender said they are still working on permits with the City of Denver but hope to have the new production space completed by the fall.

“It’s been a long process for us. We’ve been talking with contractors and architects for the past three to four months now,” Dillender told What Now Denver.

Half of the basement, which is currently used for storage, will be renovated to add two or three refrigerator/freezers and add more production space for decorating.

A dolly will also be added to Happy Bakeshop to transport freshly decorated sweet treats to the upstairs retail space. With some production space moving downstairs, that will open up more space in the shop upstairs to expand the area to take custom cake, cupcake, and cookie orders. Happy Bakeshop could hire additional staff to help with the growing business.

Some cupcake favorites include carrot cake, which features pineapple instead of nuts, red velvet, and chocolate salted caramel. The Scotcheroos, which are peanut butter rice crispy treats with a chocolate and butterscotch topping, and the lemon bars are also popular items. Wedding and birthday cakes, pies, French macarons, and quick breads are also on the menu.

“We love to do what we do, and we love the goodies that we have here in shop,” Dillender said. “We want everyone to know that we’re working hard to make sure that we can do more for them.”
