The Littleton taproom will occupy a quaint, 1,000-square-foot space. The owners have plans to invest over $150,000 in renovations to the cottage property. They are targeting to open the business later this year.
Co-founders Michael Fagan and DJ Kurtz launched Honnibrook in Castle Rock five years ago — when Colorado had only about ten meaderies. Since then, the industry has grown significantly, with 23 in the state.
Honnibrook’s mead, which is lighter than wine but heavier than craft beer, is made from local honey sourced from Lockhart Honey Farms in Colorado Springs. The company produces nearly 8,000 gallons per year, and distributes to 22 craft tasting rooms across the state. Its products are also sold in select liquor stores and online.
