Tiffany Letzo is the general manager of the Centennial I.C. Brewhouse and oversees the other locations. Letzo said depending on construction and supply chain issues, the tentative opening date is spring of 2023. “A lot of it is in the air right now, but we are on schedule currently.”

The new Grant Row Lofts will have first-floor retail space to house the Thornton I.C. Brewhouse, and next door will be the new coffee shop. “It’s aviation themed, and it’s going to be the first Runway 19. We also have a Runway 19 coming in Greenwood, Indiana.”

They are planning a menu overhaul for both the Centennial and Castle Rock I.C. Brewhouse locations in the next few weeks, so Thornton will feature the new menu. “We are going to roll out a significant menu change,” Letzo told What Now Denver.

I.C. Brewhouse is known for its burgers, especially the Fire on the Mountain, which is a spicy burger featuring chipotle bacon, pepper jack cheese, fire roasted jalapenos, and sriracha ranch. “Our burgers are delicious. They’re big; they’re juicy. They’re very flavorful. And we do fun burger combinations,” Letzo explained.

I.C. Brewhouse is designed to be a locals hangout spot for everyone to gather and enjoy a good chat and a good meal. “We really enjoy the feeling of a ski lodge, a ski tavern, where after everybody’s day on the mountain, they’re all hanging out, having beers, drinking, sharing food, talking about their day, gathering together. And, that’s the belief that we’ve taken to our restaurants,” Letzo shared.

“The reason we build these restaurants is so that it becomes a neighborhood restaurant, and people who live in the apartment communities around the restaurant have a place to go,” Letzo said. “We enjoy being part of the community.”
