Illinois-Based Sweet Basil Cafe Heading to Colorado

A family-friendly restaurant that serves breakfast all day long will make its debut in Colorado by early 2023. Sweet Basil Cafe is based in Illinois and plans to open a location in Southlands at 6105 S. Main St., Ste. F106, Aurora, CO 80016.

Sweet Basil Cafe co-owner Denise Karonis has family who lives in Colorado, so they wanted to bring the concept to Aurora. “We’re extremely, extremely excited to be there,” Karonis told What Now Denver. “I just absolutely love the area and can’t wait to be there.”

Sweet Basil Cafe currently has five locations in operation in Illinois, one opening soon, and they recently acquired two other locations in Illinois. After establishing the Aurora location in the next five to six months, Karonis said they could open additional locations in Colorado if the opportunity arises.

The planned Aurora space needs renovations before the restaurant will be able to open to the public. “It needs to be repainted and new flooring, and things like that. Most of it is cosmetic.”

Sweet Basil Cafe offers an extensive menu with large portions. “We do six-egg omelets. In Chicago, traditionally where they do them, they’re not folded over. You roll them in a pan, throw them in a convection oven, and they pop up like a little football, so they’re huge,” Karonis explained.

The handcrafted menu features nearly a dozen different types of omelets, skillets, a variety of eggs benedict flavors, stuffed French toast, crepes, and pancakes. Other menu items include pastas, salads, burgers, and more.
