Island Fin Poke is coming to Colorado, starting with a location in Westminster. According to Franchisee Tracy Egler, Island Fin Poke will open within the Shops at Walnut Creek located at 10436-10449, Town Center Dr, Westminster, CO 80021. CEO and Co-Founder Mark Setterington says, though an exact launch date is currently unknown, the restaurant’s debut is estimated for December 2022.
Though Island Fin Poke officially opened in 2016, friends/business partners Mark and Paul had brainstormed the business since the early aughts. According to the company website, “the duo had a dream to create a quick, casual restaurant that serves incredible Hawaiian-style poke in a cool-casual environment, transporting you from every day to a surf shack on the beach.”
One day, in 2016, Paul abruptly quit his 20-year job and came to join Mark in LA. The two ate their way through the City of Angels before conceptualizing what would become Island Fin Poke on a nearly five-hour trip to Las Vegas. Now the establishment has spread throughout the country, offering clean fish; an array of carefully curated sauces & marinades; and 25 fresh, flavorful toppings — not to mention a “treat you like family” mentality.
“We are grateful to be in the position we are in today where we can continue expanding our restaurant concept into new communities throughout the country,” Setterington recently told QSR Magazine. “We are extremely confident in the ability of our wonderful new franchise partners in bringing our brand to Utah, Colorado, Tennessee and Rhode Island, which we believe are ripe states for expansion right now.”
