The Denver bakery is led by James Beard-nominated chef-owner Ismael De Sousa. Founded in 2019, Reunion Bread quickly gained national recognition, with Bon Appétit naming it one of America’s best new restaurants.
De Sousa, a Portuguese-Venezuelan pastry chef trained in London, focuses on globally inspired, artisan bread and pastries, calling Reunion a “reunion of cultures”. He also hopes to add wine to the menu at the new location.
In May 2023, a bread oven explosion dealt a major setback to the bakery; Reunion Bread is now only able to operate at 30 to 40 percent of its normal production capacity. The market hall where it is located has also seen all the other tenants leave.
Ready for a fresh start, De Sousa picked the 1,500-square-foot space on the ground floor of Aston. It’s nearly three times the size of his current location. The space is currently in the design phase, with De Sousa predicting he will open in the summer.
