The incoming Seoul ManDoo is set to open at 6575 Greenwood Plaza Blvd, Greenwood Village, CO 80111 before the year ends. Seoul ManDoo has a second, permanent location in Aurora.

Both eateries are owned and operated by chef JW Lee of Seoul Hospitality Group. The entity is responsible for Mono Mono Korean Fried Chicken, Mochinut, Seoul K-BBQ & Hotpot, and Menya Ramen, which also has a space at Grange Hall. 

What Now Denver caught up with Lee for a brief chat about his vision for Seoul ManDoo:

WND: Why Grange Hall?

JW: Our initial goal was to introduce Korean dumplings to the community of Aurora. In doing so, we received a lot of support and love, so we wanted to do the same outside of K-Town.

WND: What are your hopes for the eatery?

JW: I would love to support and introduce the Korean culture to the state and provide more choices of cuisine.

WND: Do you have plans for more expansion in the future?

JW: My team and I currently have 20 units of different restaurants. With 30 years under my belt as a chef with an American dream, I won’t stop exploring my options and seeking out adventure. 

WND: What makes Seoul ManDoo special?

JW: We use family recipes that have brought us huge success. We want to bring this to Colorado and show people what great street food tastes like.
