Sisters Aminata and Rougui Dia were born in Senegal before moving to France at a young age. Living right outside of Paris throughout their youth, the two forged an affinity for food that would lead to an array of culinary endeavors — both domestic and foreign — before eventually opening Denver’s Le French in adulthood.

Now, it appears the duo is ready to open another Le French at 846 Albion St. Denver, CO 80220, according to a commercial construction permit filed with the city. This will be the sisters’ second store with their maiden operation located at 4901 S. Newport St. Denver, CO 80237. What Now Denver reached out to Aminata for comment, but did not receive immediate feedback.

Per the company’s website, Le French is “a casual chic Parisian-style bakery and café serving high-end French patisseries and coffee, as well as Parisian bistro-style breakfast, lunch, and a full dinner menu….[brunch is served] on Saturdays and Sundays.”

The project details for the incoming Le French describe a commercial kitchen, men’s and women’s restrooms, a bar, and general dining and patio space with loose tables and chairs.

While it’s currently unclear when the bakery will debut, the project description lists the building as a “gray shell” space, meaning the building itself is unfinished and may require more attention than a close-to-finished building, or a “vanilla shell” space.
