Joe Malouff’s passion for craft beer that first began with home-brewing in college has been cultivated over the years and will soon be shared with brew lovers in Wheat Ridge. Malouff has teamed up with Joyride Brewing co-founder Grant Babb to open Live Slow Brewing Co. in Wheat Ridge sometime next summer.

Malouff told What Now Denver that they are working on architectural plans and would like to move into the space at Gold’s Marketplace sometime late next month to begin demolition and construction. Live Slow Brewing Co. will replace the spot that previously housed Paramount Bowl at 2625 Kipling St. in Wheat Ridge.

They plan to take out a couple of the bowling lanes to make space for beer production. They will repurpose the wood. “We’ll use all of that wood to build up a bar and some tables,” Malouff explained.

Four other lanes will be covered with new flooring. “If bowling really takes off, we can bring those lanes back in. But when we originally open next summer, we plan on having six fully functional lanes,” Malouff explained.

Live Slow will not only offer craft beer and bowling but will provide upscale menu items such as craft-made burgers, wings, chicken tenders, and possibly street tacos.

“We’re going to focus on beer. Beer is the heart of what Live Slow is planning on being,” Malouff shared. They would also like to offer white, red, and rosé wine options.

Malouff has been toying around with ideas for beer to offer at Live Slow. One of the styles he is passionate about is a German-style Kölsch. “I’m hoping to create a recipe for a Kölsch that really shines and makes its own name for itself.”

Live Slow will feature other brews including IPAs and darker beers. Malouff would also like to incorporate a recipe he developed during his home-brewing college days. The chai vanilla porter would be offered each fall.

“We hope that it’s going to be one of the most fun places around.”
