Ludo Lefebvre, a celebrity chef based in Los Angeles, is preparing to launch his first restaurant outside of California with his eyes focused on downtown Denver.

According to reporting from the Denver Post, that restaurant will be called Chez Maggy and be located in the upcoming Thompson hotel at 1616 Market Street.

The report also states that the menu will serve things like bison bourguignon and French Denver Omelets. The name came from Lefebvre’s late mother-in-law, who was based in Colorado.

Lefebvre trained for 12 years in France with the “great masters,” according to his website. He opened Trois Mec, his Michelin-star fine dining restaurant, in 2013. Unfortunately, the restaurant ultimately closed with the pandemic.

That hasn’t stopped him from being named one of the “World’s 50 Greatest Chefs” by Relais & Chateaux or running two locations of his much-loved Petit Trois.

Chez Maggy, in addition to creating the food for the hotel, will also be in charge of the hotel’s bar, coffee shop, and in-room dining at all hours of the day.

The restaurant is slated to open with the hotel in November 2021.
