The Mestizo Food Truck has been serving delicious Latin American street-food on the corner of 38th & Pierce in Wheat Ridge since November 2020. For all of Mestizo’s fans: they will also be opening a full-service brewpub called Mestizo Food Cantina very soon.

The team behind Mestizo has been hard at work converting an old auto shop on 6800 West 38th Avenue into the cantina. The food truck wasn’t a part of the original plans, however the team decided to open one when the pandemic hit and slowed down their Mestizo Food Cantina plans.

And you can’t miss the Cantina truck as it’s an old converted school bus that’s been painted blue. I mean what better way to utilize an old school bus than to turn it into a food truck?

We can’t wait to visit the brewpub operated by this innovative team. Follow them on Instagram for daily food truck updates as well as an announcement for their opening date.
