Construction on the new location, which is the second taproom for Mountain Cowboy Brewing, was delayed over the summer because of supply chain issues, but current winter weather is helping to get things back on track. Mountain Cowboy Brewing hopes to have a soft opening at the end of March or early April of 2022.

“Eventually there will be 2,300 homes surrounding where our taproom location is,” said Ron Yovich, Mountain Cowboy Brewing president. When they began building the new taproom location, they raised it 60-feet from surrounding farmland. “It will always be up above, and so you will always have those westerly views out of our taproom towards the mountains,” Yovich told What Now Denver.

A grass amphitheater and a splash pad will be added near the taproom as part of the community development. “It will be a very cool space.”

The new taproom will showcase a similar feel to Mountain Cowboy Brewing’s original spot at 318 Fifth St. in Frederick with an aesthetic of a cross between a metal barn and a ski lodge but with more of a contemporary feel. Patios will offer plenty of outdoor seating.

The Loveland location will feature a full kitchen and larger selection of food items, but there will be space to bring in food trucks to offer a variety of cuisines. The taproom will be open from morning to night featuring pastries and kolaches in the AM, and soups, sandwiches, and shareable plates in the afternoon and evening hours.

“We like to give our kitchen a break and give our staff a break on Fridays, so we close down our kitchen and bring a food truck in,” Yovich said. “It’s nice for our customers because they get a little bit of variety.”

Yovich’s wife, Michelle, bakes cinnamon rolls, pastries, and other baked goods at the Frederick location. They are in the process of expanding the current Frederick bakery into an additional 1,200-square feet. “All of our coffee roasting and baking will be done at the Frederick location, and all of that will just get hauled up to Loveland to be served there.”

Beer will not be brewed in Loveland but will remain at the Frederick location. One brew to be served only at the new taproom in Loveland will be called the Kinston Kölsch. Some of Mountain Cowboy Brewing’s best sellers include the Hoppreciation IPA and a new brew, Jumpin’ Through Hoops Brown Ale.

Mountain Cowboy Brewing’s flagship beer is the Ella J Amber Ale, which is named after their former hops farm. “This amber ale uses all six varieties of hops that we used to grow at that farm. It’s an all-Colorado ingredient beer,” Yovich explained.

“We are really excited to open this Loveland location. My wife and I actually live in Loveland, so it’s more local to us,” Yovich shared. “We’re just excited to get this thing up and running and can’t wait to see what it grows into.” The address for the new location is 6402 Union Creek Commons Dr., Loveland, CO 80538.
