The Mountain Thai Kitchen food truck is getting its own brick-and-mortar restaurant in Broomfield. Mountain Thai has a loyal following who enjoy trying the multiple dishes created by chef and co-owner Sopit Buckman.
Sopit and her husband and co-owner of Mountain Thai Kitchen, Bruce Buckman, plan to open the new location in the spring of 2022.
They began selling Thai out of the food truck in June 2020 and had been looking for retail space for a while. “She wanted to have her own kitchen and have her own setup,” Bruce Buckman told What Now Denver. “We just wanted to step it up a notch and get our own commercial kitchen.”
They will renovate the space with new kitchen equipment and will start offering dishes as take-out and possibly delivery. The food truck will continue to be in service.
They decided on the spot at 1000 Depot Hill Rd., Broomfield, CO 80020 because the area has more parking and of course, more space. It is also in an area already served by the food truck. “We wanted to stay in Westminster, Broomfield.”
The brick-and-mortar space has room to expand. “Later on down the room, when we’re ready, we can open it up to a full, sit-down restaurant.”
Some of the favorites are the pad Thai, drunken noodles and cashew chicken. They also offer curry dishes, soups, and sticky rice mango, which is a seasonal dish. “When she does have it [sticky rice mango], she usually sells out of it.”
Mountain Thai Kitchen offers specials, which could become staple menu items including the basil ribeye. It is served over rice with a fried egg. Egg rolls, crab cheese wontons, pot stickers, shrimp dumplings, and a variety of fried rice dishes are also on the menu. “There’s so much to choose from,” he said.
The Buckmans plan to open the take-out restaurant in Broomfield in April or May of 2022.
