A coffee cabin on Crystal Valley Pkwy. in Castle Rock is growing. In 2013, Sarah Haymon moved to Castle Rock from Alaska, where coffee cabins are prominent in local neighborhoods.

Haymon opened Oo-de-Lally Coffee inside a coffee cabin at 484 Crystal Valley Pkwy. in September 2020 during the Pandemic. “It’s pretty unbelievable,” Haymon said. “It just boomed.”
Haymon purchased nearby acreage to expand the Oo-de-Lally Coffee concept and will break ground on the new site at 488 Crystal Valley Pkwy. in Castle Rock next week. The tentative opening date is October or November of 2022.
About 90% of Oo-de-Lally Coffee’s current customer base is from locals within the community. “I just love them. We see them every day,” Haymon told What Now Denver.
Oo-de-Lally Coffee currently offers a variety of drinks including espresso, hot and cold drinks, Red Bull blasts, chai tea lattes, a soda bar, and more. Pre-packaged food items such as breakfast pastries, muffins, and cookies are also on the menu.
Once at the new two-story location, Oo-de-Lally Coffee will offer a more extensive food menu. The new location will provide a drive-thru option, indoor seating, and a rooftop patio. “People can go up on the rooftop and drink coffee and hang out at the fire pit. It’s going to be very different than what people have seen in a coffee house,” Haymon said.
“I love decorating. I love thinking outside of the box so lots of surprises on the interior to come,” Haymon said.
