New Upscale Restaurant Concept Coming to Lyons

Marigold will feature American food with an Italian and French influence.

Marigold is a new concept from owner and head chef Theo Adley, who has run other Colorado restaurants including The Pinyon. The small, American restaurant with Italian and French influence is expected to open in Lyons in the summer of 2022.

“We’re really excited to be working with our local farms, and we’re going to put out a small menu with a bunch of great, hand-made product,” Adley told What Now Denver.

“Our concept is probably a little bit more upscale than what’s currently available in Lyons.” The menu will change frequently, driven by seasonal harvests. Marigold will also feature an extensive wine program.

Marigold is still waiting on the liquor license to be processed, and the construction phase is wrapping up. Marigold could possibly open in mid-June. “I’m keeping my head down and trying to open this restaurant with everything I’ve got. This is my baby,” Adley said.

“I’m just really excited to serve the community up there and give them another great option and add to the already amazing ecosystem of independently-owned restaurant and bar operators in the area.”

Marigold is currently hiring line cooks, servers, bartenders, and more to work at the restaurant to be located at 405 Main St., Unit B in Lyons.
