America’s first 100 percent plant-based burger joint brings vegan burgers, shakes and fries to the University neighborhood

On Saturday, August 13, Next Level Burger (NLB) will celebrate its grand opening in Denver’s University neighborhood at 1605 E. Evans Ave. As America’s first 100 percent plant-based burger chain, Next Level Burger’s mission is to fight climate change by serving burgers for a better world—made with all-organic veggies and non-GMO ingredients.

The vegan burger joint originated in Oregon in 2014, and has since grown to eight locations in Oregon, Washington, New York, California and Texas. The brand’s Denver debut represents a homecoming for Co-Founder Matt de Gruyter, who grew up in the Mile High City and met his Co-Founder and wife, Cierra de Gruyter, while the pair were attending Metro State University. Matt and Cierra had a comfortable life with their young family, but they were inspired to create Next Level Burger as a response to climate change and the incredible toll that meat production takes on the environment (nearly 2,000 gallons of water to produce just a single pound of beef!).

Next Level’s burgers, which have garnered accolades from Thrillist, VegNews, and many others, include selections such as the Signature Burger (house-made organic mushroom and quinoa patty, organic avocado, “cheese” and roasted garlic-thyme mayo); The Maverick Burger (house-seasoned Beyond Burger patty, crispy onion rings, organic tempeh bacon, organic dill pickles, choice of “cheese,” hickory BBQ and house-made special sauce); and the Chipotle Burger (black bean and veggie patty, organic guacamole, pickled jalapeños and chipotle mayo). NLB prides itself on its customizable menu, offering an array of patties, buns, cheese options and topping choices.

In addition to burgers, NLB offers Crispy Chik’n sandwiches and tender baskets, as well as organic fries loaded up “Chili Chz style,” “Beer Chz style” and “Fire style.” NLB’s shakes are hand spun with organic, house-made soy or coconut soft-serve ice cream, and come in an array of indulgent flavors, from Cookies n’ Cream with house-made gluten-free chocolate cookies to a Strawberry Shake blended with organic strawberries.

“Next Level Burger is all about fighting climate change, cultivating sustainability and promoting an awesome lifestyle,” Matt said in a statement. “Our curated, expansive menu truly offers something for everyone, whether you’re vegan, sustainability minded, or just looking for an awesome, delicious meal. We’re out to re-invent the burger joint for the 21st Century.”

The Denver location, which is just a stone’s throw from the original Chipotle near the University of Denver, features a warm and welcoming environment for guests to enjoy an elevated fast-casual experience, with vibrant colors and reclaimed wood in the 40-seat dining room, as well as additional patio seating. NLB’s offerings will be available for dine-in and takeout (using all-compostable to-go ware).

Next Level Burger will open for lunch and dinner daily from 11 a.m. to 10 p.m.
