Derby is a a longstanding figure in Aspen’s restaurant industry, known for his successful ventures including the popular French-American bistro La Crêperie du Village. Vongerichten, son of the famed chef Jean-Georges Vongerichten, started Wayan in New York City several years ago.

The menu at the Manhattan Wayan features Indonesian-French fusion cuisine. Guests can expect an array of dishes that blend the rich culinary traditions of both cultures. An eclectic selection of small plates, sharing platters, and main courses allows diners to explore a diverse range of flavors.

Liquor licensing records show that the concept was granted a license in late May. The space formerly housed Local Coffee, a cozy cafe spot with a selection of artisanal coffee and pastries. It’s in downtown Aspen in a prime location.
