The beloved Chicago-based fast-casual chain Portillo’s is making waves in Colorado with rumors of a new location opening. Plans filed with the city of Littleton show a project in the works at 700 West Mineral Avenue, and the news has the area abuzz.

The proposed Littleton site is part of a significant 45-acre commercial and residential project, featuring two anchor stores — Costco and another yet-to-be-announced retailer — alongside nine smaller retail units and a 370-unit multi-family residential complex.
Portillo’s plans for this location include a 6,250-square-foot restaurant with a 500-square-foot patio with seating for 38. There will be a a dual-lane drive-thru accommodating 24 vehicles, and parking spaces available for 98 cars.
Known for its Chicago-style hot dogs, Italian beef sandwiches, burgers, and famous chocolate cake shakes, the brand first teased its entry into the state last year. But plans for a Denver store near the airport seem to have stalled with no new updates recently.
Founded in 1963 in Villa Park, the chain has grown to over 75 locations across the U.S. and continues to expand aggressively. The company revenue reached $679.91 million in revenue in 2023, a 15.81% increase from the year prior.
