Postino’s wine, panini, and elevated snacks landing soon in Boulder

Postino plans to bring more wine and casual cafe dining to Colorado, expanding from its Denver location with an upcoming spot at 1468 Pearl St. in Boulder.

Postino plans to bring more wine and casual cafe dining to Colorado, expanding from its Denver location with an upcoming spot at 1468 Pearl St. in Boulder, according to the restaurant’s website. Locally-sourced creative bites and a massive selection of rotating boutique wines will offer an enticing selection in a funky atmosphere.

“We opened up in Colorado back in 2015 and have completely fallen in love. It’s an incredible state with a strong sense of community,” Brittany Baldwin, senior director of marketing at Upward Projects, told What Now Denver in an email. “We’ve had an eye on Boulder for quite some time now. When the right opportunity presented itself, we jumped!”

The almost 5,000 square foot inside will (in warm weather) open up to an 800 square-foot patio with a total of almost 150 seats to sit, sip and snack. On Postino’s seasonal menu in Denver are a consistent selection of shared bites that include fresh grilled veggies, salads, soups, bruschetta, charcuterie boards and panini sandwiches. For those not into fermented grape juice, Postino plans to serve up local brews. Weekends, brunches will feature savory traditional, upscaled eats along with funky cocktails and mimosas. 

Like its locations across Arizona, Georgia, and Texas, Postino Boulder will include an eclectic interior that will surround patrons with found objects, vintage paraphernalia, groovy décor, inspired lighting, and an art installation. 

“We work with some of the best vintage pickers to source one-of-a-kind furniture, decor, artwork and lighting that makes each location totally unique,” Baldwin wrote. “Additionally, this location is going to include an art wall featuring reclaimed roller skates – giving it a playful vibe that we think our guests will love.”

The restaurant will be open Monday through Thursday from 11 a.m. to 11 p.m., from 11 a.m. to midnight Fridays, 9 a.m. to 12 a.m. Saturdays and 9 a.m. to 10 p.m. Sundays. Postino is aiming for a February 2023 open date.
