Sabor Del Campo co-owner Kadishia Cardona-Garcia is teaming up with her mother, Mayra Garcia, who is co-owner and chef, to open the Puerto Rican cuisine kitchen. They are still working on the inspection process but hope to open Sabor Del Campo by early next year.

Customers will be able to order to-go dishes online, via phone, or in-person. The virtual kitchen will also offer delivery through DoorDash, UberEats, Postmates, and Grubhub. Sabor Del Campo is working to add other delivery services.

Dishes will be served through contactless pickup in to-go containers. “We’ll have a little outside eating area where you can pick up your food and eat outside,” Cardona-Garcia explained.

Although this is a new restaurant for Cardona-Garcia and her mother, the concept isn’t new to them. Cardona-Garcia moved to Denver several years ago, and her mother, who is originally from Puerto Rico, later moved to the area from Orlando, Florida. While in Florida, they served ready-to-eat meals via a food trailer and have catered events and weddings locally.

They no longer have the food trailer and are ready to move forward with their next venture. “Now, we’re more of an establishment, so we’re super excited to bring our food to the public,” Cardona-Garcia said. “Denver definitely lacks in the Puerto Rican food industry, so I am excited to share our culture, food to the community.”

Appetizers on the menu include Sorullitos De Maiz, which are cornmeal fritters, Empanadillas, which are fried turnovers with a choice of meat, and Tostones Al Ajillo—fried plantains with Sabor Del Campo’s signature garlic sauce.

Main courses are offered and include a protein, choice of rice, and two sides. For example, Pernil, which is a Puerto Rican-styled roasted pork, and Pechuga à La Plancha, a grilled chicken breast, are options. Desserts include tres leches and flan.

Eventually, they would like to open a storefront restaurant with indoor dining. Until then, Sabor Del Campo will serve traditional Puerto Rican cuisine at 810 N. Vallejo St., Denver, CO 80204. “I hope that with this kitchen being out, more cultural foods will come out, too. I definitely want Denver to keep growing in the Spanish cuisine industry,” Cardona-Garica shared.
