“We don’t have a solid date just yet,” said owner Dan Vizzard when What Now Denver reached out to him on Tuesday. “We’re hoping it’s sometime in September, but sometimes things change.”

As to the idea of providing some “Colorado comfort food,” he said, “We don’t really have a hard definition of the food just yet. We’re taking American food and cooking with what’s local here to Colorado.”

For example, Colorado doesn’t have much by way of local seafood, so they plan to take dishes like shrimp and grits where every other ingredient besides the shrimp is local to Colorado. “Plus, we’ll have things like gumbo made from buffalo instead of seafood. Things like that is the direction we’re heading with it.”

Vizzard also says he hopes the restaurant will be approachable. “We’re not trying to be over the top fine dining. Just a place for people to have a good time.”

A Facebook post on the day of this publication indicates they’re moving forward to start hiring all positions for the restaurant.
