The new space will be about 2,500-square-feet less than the current multiple-story, 11,000-square-foot space.

The bar menu will continue to feature a variety of margaritas include the Classic Rio Marg, the Big Tex Marg, and the Fresh Jalapeno Marg. Beer, wine, other spirits, and mocktails are also available to thirsty diners.

Appetizer choices include quacamole, chile con queso, and Queso Fundido with Jack cheese, roasted poblano rajas, mushrooms, caramelized onions served with house-made flour tortillas.

Fajitas, burritos, quesadillas, tacos, and more are what’s for dinner…or lunch. Don’t forget to try one of Rio Grande Mexican Restaurant’s desserts—sopapillas, churros, coconut flan, or ice cream.

Owner Pat McGaughran opened the first Rio Grande Mexican Restaurant in Fort Collins in 1986 and now has five locations including the Denver spot and in Greeley, Boulder, and Lone Tree.
