The Rio Grande Mexican Restaurant, which shut down its doors at 143 W. Mountain Avenue, is in the middle of remodeling their restaurant after a kitchen fire halted operations on July 21.

In the meantime, the restaurant, founded by Pat McGaughran, is operating its Fort Collins location as a popup at 125 S. College Avenue.

According to recent reporting by the Coloradoan, McGaughran signed a nine-month sublease for Old Town’s Rove and Element space while he’s in the midst of the roughly six-month closure.

Outside of the location in Fort Collins, Rio Grande also houses restaurants in Boulder, Denver, Greeley, and Park Meadows for guests who still want to enjoy the full experience while the Mountain Avenue location is still under renovation.

Although the Fort Collins location that housed the Rio for more than 30 years is going to be closed for a while, McGaughran told the Coloradoan he’s grateful the space was saved in the first place.

“It’s an old building. To see them do what they do at their best… I’m just so grateful,” he said, noting there could have been a very different outcome for the 121-year-old building.

As of now, no reopening date is set, but it is expected sometime in spring 2022.
