Saison Cellar, owned by winemaker Mark Bright, is in the process of opening the doors for their second-ever tasting room in Colorado at the Zeppelin Station food hall at 3501 Wazee Street.
“Things are going great,” said Bright when he spoke to What Now Denver on Tuesday. “We’re getting ready to start construction on the space and working toward getting it built so we can be open by the first week of November.”
This second tasting room is coming on the heels of their first location opening up in Los Gatos, California.
Bright said he’s known the owner of the Zeppelin Station, Paul Qui, for a very long time and couldn’t turn down the invitation to open up the tasting room in Colorado.
“There’s a lot of great wine people in Denver. I had an opportunity to show the wines I make and the wines I love.”
The wines, he said, are all about “creation and curation.” The cellar offers all the wines Bright makes from around the world, as well as the wines that have influenced his winemaking skills. Each of the wines will be offered by the glass, as part of a flight, or even for retail by the bottle.
“All of the wines have influenced my winemaking one way or the other. I get to tell the stories of why I’ve done it and how they’ve influenced them.”
As to the Zeppelin Station, Bright was attracted to the fun, hip, and different vibe Qui has created.
“It’s not all snooty and uptight. Wine is supposed to be fun and enjoyable, not stressful and pretentious.”
Bright himself will make a visit to the tasting room once a month for wine dinners and education to share his philosophy behind what he believes in the wine world, and is excited to share his thoughts with people who want to enjoy wine and listen.
