Santiago’s to Offer Mexican Flavors in Superior

Construction is underway on a new Santiago’s Mexican Restaurant in Superior. The corporate office at Santiago’s confirmed the new restaurant will open at 406 Center Dr., Superior, CO 80027. The space is being renovated and remodeled.

Santiago’s offers authentic and fresh Mexican dishes in a casual dining environment. Diners can start the day with a breakfast burrito or pancakes. Stuffed sopapillas, tacos, tamales, enchiladas, and fajitas dot the menu, along with flautas and burgers.  

A large selection of burritos is available from bean and chicharrones or steak to chicken or carnitas. Sides of rice, beans, and salsa are available in individual portions or in family size.

Santiago’s was founded by Carmen Morales and first opened in Brighton in 1991. The Colorado restaurant franchise now boasts more than two dozen locations across the state. There is no word yet on when the Superior location will open.
