Sasquatch Cookies, owned by Brooke Orist and Kaitlyn Zweber, is getting ready to join the likes of Oliver’s Deli in the Red Leg Brewing Company at 2323 Garden of the Gods Road.

“We’re also in the process of possibly two more locations in Colorado Springs and Denver,” said Orist when she spoke to What Now Denver.

The company, having just celebrated four years in operation, started when Orist needed a career change and called on the business partners she had in the nonprofit sector.

“I wanted to give a cookie delivery service on Thursday, Friday, and Saturday nights working as a delivery only.”

As business started to grow, the two ladies started thinking about moving into their first brick-and-mortar store, which opened up at 1020 E Jefferson Street just over a year and a half ago. After surviving COVID and seeing a further increase in business, they knew they had to keep growing.

Although you can come hang out in the store, Sasquatch Cookies still operates as a delivery service, as well.

As to the name, Orist said, “I was just trying to think of something memorable. Out here, a lot of people believe in Sasquatch so we decided just to go with that.”

The business also offers 10 percent of all proceeds to a local homeless shelter in hopes of leaving a “big footprint just like Sasquatch.”

“It’s been amazing to watch it grow,” she said, adding in her excitement about the upcoming location. “The Red Leg Brewing Company has these shipping containers out in the biergarten that they’re renting out to local businesses. It’s busy over there, so we’re excited to get in once building and construction is complete.”

That construction is slated to be done by the end of the year. Since the shipping container is smaller than their storefront, they’ll be offering a limited menu.
