As construction continues on the new Seoul BBQ restaurant in Colorado Springs, founder and chef JW Lee is preparing to serve excited customers authentic Korean barbecue dishes.
Seoul BBQ is tentatively scheduled to open sometime in late April as delays pushed back the originally scheduled March opening date. The restaurant will feature “the highest quality ingredients and freshest meats around,” according to the Seoul BBQ website.
The menu will include lunch and dinner options to grill at your own table. Guests can choose up to five meats for a combo, which also includes side dishes and salad. A variety of beef, chicken, pork, and seafood choices are options.
“We always make a lot of side dishes,” Lee told What Now Denver, “but we always end up doing some barbecue in the center. That is the traditional way to cook the meat.”
House dinner specials include Mool-nengmyun, which is a sweet potato noodle with beef broth, brisket, and more, and the Pork-Bulgogi dolsot, which features pork bulgogi over steamed rice and vegetables in a hot stone pot.
Lee began his culinary career in Korea and has opened more than 20 restaurants since immigrating to the United States. He opened Seoul BBQ at 2080 S. Havana St. in Aurora about 15 years ago and owns Menya Ramen near the new Seoul BBQ in Colorado Springs. “We were getting a lot of good feedback, and we provided some of the Korean dishes,” Lee said, so he decided to open Seoul BBQ nearby to feature a variety of Korean food.
The new Seoul BBQ will be located at 1645 Briargate Pkwy., #243, Colorado Springs, CO 80920.
