SkinnyFATS Files For Permit to Begin Construction in Downtown Denver

The first of ten Colorado SkinnyFATS franchises with Elevated Inc. applied for a Denver city permit to finish the interior commercial construction at 3294 Larimer St. in the River North Art District. The partners plan to upgrade the downtown Denver franchise with a second floor space, new interior finishes, and an accessory outdoor patio.

This sounds a bit more spread out than the original 22-seat Skinny FATS in Las Vegas in 2013, described on the store’s webpage. Soon after a line formed out the door into a small industrial park, it was apparent more space was needed.

Elevated Inc. already sports 18 franchised restaurants, according to owner David Timmons’ LinkedIn page. The SkinnyFATS concept fits right in with the fast casual real estate group’s collection of comfort food locales. SkinnyFATS promises satisfying “Healthy and Happy” options to offer something for everyone. The restaurant splits the menu into two distinct options — a healthy side and a happy side. Think shaved steak vs. buffalo chicken or potato curry vs. potato curry topped with braised short ribs. There are shareables, sandwiches, tacos, and sides galore. Drinks are even separated into spicy juices and sweet teas and punches. Whatever people are looking for, they’re bound to get full from it at SkinnyFATS.

There’s no official word yet on when the first Denver SkinnyFATS will open, but considering the small amount of construction, anywhere from early- to mid-2023 is within a logical window.
