The owners of Sunroom Brewing have been developing craft beer in the foothills of Golden with plans to open a family-focused location in the Denver Metro area. Co-owners Matthew Miller and his wife Melanie hope to open Sunroom Brewing in the next nine to 12 months. They have not finalized a location, but they are looking in Golden, Arvada, and the northwest Lakewood area.
Matthew Miller said finding the location has not been the issue, but getting the equipment, especially stainless brew vessels from overseas, has been holding up their plans. “Everything is just on massive delay and backorder right now,” Miller said.
Sunroom Brewing is using a test brewing system the Millers purchased a couple of years ago to create a variety of craft brews. “We’ve just been scaling up recipes and beginning to get our name out there,” Miller told What Now Denver.
“Our flagship right now is the Madison IPA. It’s named after our first daughter,” Miller said. “It’s an easy drinking IPA.” Sunroom Brewing is testing several other IPAs, a brown ale entitled Doc, a cream ale, and more.
Once they select a location, Sunroom Brewing plans to revolve the space around the entire family. With young children and a love for the outdoors, the Millers want to create a place for people to go after a hike, bike, or afternoon spent enjoying the outdoor activities of Colorado.
“We’re going to have a stage for live music, free juice boxes for the kids. And a good patio atmosphere is what we’re striving for.” They also plan to have food trucks seven days a week. Sunroom Brewing is expected to open to the public in late 2022 or early 2023.
