The Bindery’s Global Artisanal Fare Coming to the Denver International Airport

Get ready for cozy fare, classic cocktails, and a solid wine selection while waiting for departure.

Chef Linda Hampsten Fox, the woman who made private meals for primatologist Jane Goodall, The Dave Matthews Band, Colorado Senator John Hickenlooper, and former Speaker of the House Nancy Pelosi, is extending her handcrafted food to the Denver International Airport at 8500 Peña Blvd. Hampsten’s restaurant, The Bindery, plans to serve up its elegant eats in Concourse A of the airport’s West Marketplace sometime in 2023, per QSR Magazine.

The celebrated chef, whose resume includes stints through Europe and South America (per a Yellow Scene interview), has aspirations to turn the concourse experience from drudgery to luxury leisure via the LoHi eatery’s array of artisanal dishes. After spending time in Swiss groceries, Italian markets, and French bakeries, the local purveyor brings farm-sourced ingredients to globally-influenced dishes like chestnut honey and thyme baby back ribs and fermented green peppercorn bison tenderloin. These are set off by a vibrant wine list and choice of several classic and craft cocktails.

Hampsten doesn’t keep her chops a secret because she believes in delivering incredible dining choices to anyone with a hungry belly. She founded a cooking school in Mexico (per 303 Magazine), published a cookbook full of The Bindery’s recipes, and now is bringing her food to an international hub.

The Bindery (housed in a former book bindery) serves breakfast, lunch, and dinner. There’s no word yet on which meals the Denver Airport location will serve. Keep an eye on What Now Denver for updates.
