The Regular and its accompanying market, El Mercado, will open at 1432 Market St Denver, CO 80202. Co-Owner Sydney Younggreen told What Now Denver, she and her partner/Co-Owner Brian de Souza are planning for an early spring 2023 opening, likely in March or April

For at least the next six years, The Regular and El Mercado will take over a colossal 6,500-square-foot building where Younggreen and de Souza themselves will cook up “an eclectic, upscale menu with homemade pastas and seafood, steak and vegetarian options.”

The Regular is a spin-off of sorts of the couple’s initial 2020 concept, The Guest — “a reservation-only dinner series with a rotating multi-course menu.” However, the approaches to each experience are polar opposites as de Souza explains, “with The Guest, you don’t know the menu. But with The Regular, we’re trying to satisfy every kind of palate.”

Younggreen and de Souza will also move The Guest to a new location, but they’ve opted to keep the location a secret. You see, they don’t intend to reveal the restaurant’s address until you’ve landed a reservation. Currently, their waitlist is 700 guests deep. 

El Mercado, on the other hand, will enable Younggreen and de Souza to keep The Regular an intimate experience. The market will take over the front portion of the massive building, allowing for a more tucked-in eating environment. 

“El Mercado will serve coffee, pastries, seasonal produce, cured meats, seafood, and local vendor items,” The Denver Post explains. “It will be open from 10 a.m. to 6 p.m.”

When asked what they’re most excited about regarding The Regular, Younggreen told What Now Denver, “I’d say we are most excited to be doing what we love again. It’s been a long two-year process designing every inch of this space together and working on new menus. We can’t wait to share this with the Denver community and get our team working under the same roof.”
