As part of the extensive renovations planned for 2024, Gaylord Rockies Resort & Convention Center will re-concept some restaurants on the property — located at 6700 N. Gaylord Rockies Blvd. The current Vista Montagne restaurant into the newly envisioned Copper Table, according to 9News.

Copper Table will focus on authentic Colorado cuisine, providing a hearty menu inspired by local ingredients and traditional flavors. Guests can expect dishes featuring local trout, rotisserie free-run chicken, cast iron elk, and bison rib eye. The restaurant will serve breakfast, lunch, and dinner.

The restaurant’s design will highlight the Rocky Mountain landscape, creating a space that reflects the destination’s natural charm. A central feature of Copper Table will be its exposition kitchen with a gleaming copper hood. The conservatory-inspired dining room is centered under a large skylight, offering a bright and inviting atmosphere.

The redesign of Copper Table is a collaborative effort by a dedicated project team at Blur Workshop. There will be an increased capacity compared to its predecessor, seating 328 people. That will include 15 bar seats, and the central bar will be a focal point at the restaurant’s entrance.
